<span style="background-color: white; color: #222222; font-family: Arial, sans-serif; font-size: 12pt; line-height: 115%;">A brunch with friends was
planned for the end of Week 25 and I figured a breakfast pie would be a hearty
dish that all of us could enjoy. The trick for this dish was finding a
breakfast pie that did not involve potatoes. My husband is not a fan of
potatoes, and believe it or not, most breakfast pies throw potatoes in the mix.</span></div>
<div class="MsoNormal">
<span style="color: #222222; font-family: "Arial","sans-serif"; font-size: 12.0pt; line-height: 115%;">
<br />
<span style="background: white;">Earlier
in the month I had seen a recipe for a pie with egg, cheese, bacon and potato,
so I decided I would do a little modification of my own and make a pie using
all but the potato. In order to make this happen I used portions of the
recipe I had found, as well as a recipe I had used in December for Three Cheese
and Onion Pie.</span><br />
<br />
<span style="background: white;">I used
a parbaked All Butter Crust for this pie.</span><br />
<br />
<span style="background: white;">The
filling consisted of small pieces of bacon, a cup of cheese (Mexican cheese is
what I had on hand, though any number of cheeses could be substituted here),
small amounts of cayenne, salt, and pepper, half & half, and eggs.
The most time consuming part was frying up the bacon before mixing all
the other ingredients together.</span><br />
<br />
<span style="background: white;">This
pie was tasty, but not a show-stopper. Would I make this <a href="http://theclevernorthwind.blogspot.com/p/savory-pies.html">Egg,Bacon and Cheese Pie</a> again? Yep,
but not for a crowd you need to impress. Thankfully, my brunch was among
friends and no one went away unhappy, including me.</span></span></div>

through my fingers much too quickly and I did not want to take another pie
break so soon, so as I was putting the box of Bisquick away, I came across a
recipe called the </span><a href="http://theclevernorthwind.blogspot.com/p/savory-pies.html" style="font-family: Arial, sans-serif; font-size: 12pt; line-height: 115%;">Impossibly
Easy Cheeseburger Pie</a><span style="background-color: white; color: #222222; font-family: Arial, sans-serif; font-size: 12pt; line-height: 115%;">. My family needed dinner, I needed a pie, and
so here we are.</span><br />
<div class="MsoNormal">
<span style="color: #222222; font-family: "Arial","sans-serif"; font-size: 12.0pt; line-height: 115%;">
<br />
<span style="background: white;">I feel
as though I am cheating a bit since part of this pie comes from a boxed mix,
but I have concluded that although I may have been given a head start I am
still following a recipe for pie. This
counts, however brainless it may be.</span><br />
<br />
<span style="background: white;">This
pie truly does live up to its name, unlike my pie from Week 23. If you
can chop an onion, brown some meat, and stir a few ingredients around in a
bowl, then you can make this pie. It is not only easy, but fast and
reminded me of growing up.</span></span></div>

Week 23 I wanted to celebrate a friend and long time member of my church by
baking a pie. Carole's birthday came as she was packing up her life to
move to the east side of the county where she would no longer be able to attend
our church. Carole is diabetic, so I promised I would deliver a sugar
free pie that she could eat at our next women's gathering. I found a
recipe called the Best Tasting Sugar Free Chocolate Cream Pie from <a href="http://suite101.com/article/best-tasting-sugar-free-chocolate-cream-pie-a312939">Suite101.com</a>,
and based on the name I thought it might deliver the proper results.</span></span></div>

Chiffon Pie</a><span style="background-color: white; color: #222222; font-family: Arial, sans-serif; line-height: 115%;"> I made during Week 22 was made for our Easter celebration at my
in-laws. Living in Southern California, the odds that Easter would fall
on a warm and sunny day were quite favorable. I wanted a pie that would
not be heavy, as well as a pie that would be full of life and brightness to
remind us of the celebration of Christ's resurrection. Upon reading through
this recipe from the Summer Entertaining magazine by Cook's Illustrated (Summer 2009), this pie would fit the bill.</span><br />

<span style="color: #222222; font-family: Arial, sans-serif; line-height: 115%;">

<span style="background-color: white;">The
crust for this pie, a pat-in-the-pan crust, is a new one for me. Along
with some of the usual ingredients for crust--flour, sugar and butter--this
recipe also called for cream cheese to help stabilize it and keep the juicy
raspberries from making a soggy mess of the bottom of the pie. After
mixing up the ingredients for the crust, which looked like loose crumbs, I put
the crumbly crust in the pie pan, and pressed them around the base and up the
sides of the pan. Although I placed the crust in the refrigerator,
following the directions, I did not leave it in for the full hour as directed
because we had to leave for my in-laws. I did not think taking it out 15
minutes early would make a big difference, but I was wrong! While baking, the sides of the crust slipped down into the base. When I pulled it out
of the oven, I tried to manipulate the sides of the crust while it was still
hot to form into a more attractive crust. This sort of worked, but next
time I will just make sure the crust refrigerates for at least an hour before
baking to see if the problem can be solved that way. Otherwise, I believe
there could have been better instruction on this crust, perhaps involving pie
weights?</span></span></div>

Saint Patrick’s Day kicked off Week 21, and I wanted a pie
that would ring in Irish spirit. Being
the only one in my family of four who likes potatoes, many of my savory pie ideas
were just not going to happen unless I was to eat the whole pie myself… not likely. I decided I would capture that Saint. Patty’s
day mood, as well as satisfy my ice cream-loving family by making the <a href="http://theclevernorthwind.blogspot.com/p/frozen-pie-recipes.html">Easy
Grasshopper Ice Cream Pie</a> from <a href="http://www.tasteofhome.com/">Tasteofhome.com</a>.</div>
<div class="MsoNormal">
<br /></div>
<div class="MsoNormal">
For the crust, I made chocolate cookie crust, using crushed Oreo
chocolate sandwich cookies and melted butter, mixed and pressed into my pie pan. The filling was mint chocolate chip ice
cream, green for Saint Patrick’s Day, softened enough to spread and smooth onto
the crust. To top off this easy pie, I sprinkled
crushed peppermint patties, drizzled Magic Shell chocolate ice cream topping,
and placed the pie in the freezer to firm up.

Instead of going with the All-Butter Crust which I use in
most of my pies, I decided to follow the recipe provided in the New Best Recipe

of butter and shortening and for this particular pie, adds crushed graham
cracker crumbs as you roll out the crust.
The idea here is that the graham cracker added to the crust will allow
the crust to stay firm, after adding the lemon filling. This proved to be true for the pie I made, as
well as providing a subtle and complementary flavor to the crust, not found in
the average Lemon Meringue Pie.</div>

<div class="MsoNormal">
Week 19 was leading into my husband’s birthday weekend, so
he asked if I could make a “pizza” pie for him.
At first I laughed at him, but I told him if he could find pizza recipe
with pie in the name, I would use it for my blog. Well, he found a few and this week I went
with the <a href="http://www.theclevernorthwind.blogspot.com/p/savory-pies.html">Sausage

This pie was very much about layering. The base layer, or crust, was my All-Butter
Crust. From the base I added layers of sliced
mozzarella, sauce, shredded Monterey Jack cheese, sauce, pepperoni and
sausage. I repeated this once more,
omitting the green olives on top of the last layer of meats since my man has an
aversion to any type of olive. I
finished the pie off with the remaining sauce and the top crust. </div>

I found a recipe for a Chess Pie in my A Taste of Kansas City: Then and Now cookbook called the <a href="http://theclevernorthwind.blogspot.com/p/miscellaneous-pie.html">Myron Green Chess Pie</a>. The ingredients were not other-worldly, nor

No instruction on cooling on a wire rack or refrigerating, so I let this
pie sit on the counter for an hour or so to cool down slightly and thicken up
more. No luck. I placed the soupy pie in the refrigerator

Since neither of us had experienced Pecan Pie before I feel a little

Our friend Erin’s birthday happened to fall on Week 15, so I
let Erin’s preference guide the pie for this week. I had already made her all-time favorite pie,
<a href="http://theclevernorthwind.blogspot.com/2012/11/i-thought-i-saw-graham-cracker-in-there.html">Banana Cream Pie</a>, during Week 3 and since part of my pie adventure is to not
repeat pies, I started flipping through my cookbooks to find a pie with banana
in it that might serve as a suitable replacement. I came up with two that I was very interested
in trying and Erin opted for the <a href="http://theclevernorthwind.blogspot.com/p/cream-pies-recipes.html">Banana
Blueberry Pudding Pie</a>.<br />

The crust on this pie was unique. Rather than a pastry crust or some form of
crushed cookie with melted butter, this recipe called for crumbled vanilla
wafers left unmarred by other ingredients or baking. Just crumbled vanilla wafers. This was topped with sliced bananas and
blueberries that had been dipped in fresh lemon juice. So far putting this pie together was very
simple, and not having to use the oven would make this a perfect pie to make
during the hot summer when turning the oven on means raising the temperature of
your home from miserable to standing at the fiery gates of Hades.</div>

left open or finished with a crumb topping, but who can resist a crumb topping? “Not
I,” said the avid pie-baker. </span></div>

<div class="MsoNormal">
<span style="font-family: Arial, Helvetica, sans-serif;">If you have ever wondered what a brownie wrapped in a pie
shell was like, make a <a href="http://theclevernorthwind.blogspot.com/p/cream-pies-recipes.html">Tarheel
Pie</a>. This recipe was presented to me
by my husband’s Aunt Monica. Two
Christmases ago, she baked this pie and I did not get to try it because the
fruit side of me won over the chocolate side.
Instead of trying the <a href="http://theclevernorthwind.blogspot.com/p/cream-pies-recipes.html">Tarheel
Pie</a>, I opted for Aunt Monica’s Apple Pie (absolutely divine!). Since that day, however, I have thought about
the pie I had missed. So during Week 12,
I decided to discover for myself the joy of a <a href="http://theclevernorthwind.blogspot.com/p/cream-pies-recipes.html">Tarheel
Pie</a>.</span></div>
<div class="MsoNormal">
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span></div>
<div class="MsoNormal">
<span style="font-family: Arial, Helvetica, sans-serif;">For the crust, I used Grandma’s oil crust. I had read the directions for the pie earlier
in the week and since they seemed simple enough, I thought I would not over-complicate it by making a crust that would require refrigeration or
freezing. On top of that, I had run a half-marathon
the day before I made the pie and any amount of work was sounding like too much
work. </span></div>

<br />
<span style="font-family: Arial, Helvetica, sans-serif;">The crust was ready and in the pie pan in about five minutes
and the filling took about the same amount of time. Easy! My
only complaint with this pie was that I probably over-baked it. The recipe calls for 30-40 minutes of bake
time and I was wanting my crust to brown a little more, so I left it in for the
full 40 minutes. The pie was still very tasty,
but not as gooey as it could have been had I heeded the warning to not over-bake it! </span><br />

<div class="MsoNormal">
<span style="font-family: Arial, sans-serif;">During the
fifth Sunday of December, my church was having a day of Worship Through Action,
in which we would put together crisis care kits to be sent all over the
nation/globe during major catastrophes (i.e. hurricanes, tsunamis, earthquakes,
etc.) , followed by a time of potluck fellowship.</span><span style="font-family: Arial, sans-serif;"> </span><span style="font-family: Arial, sans-serif;">My go-to on these pie adventures has been
dessert pies, so I thought I would break my pattern and bring a brunch-type pie:

the owner of a pie shop, High 5 Pie, and a couple of coffeehouses, Fuel Coffee,
in the greater Seattle area. One of the
interesting things about this particular pie cookbook is the variety of options
that are held within. Each recipe can be
made into a variety of forms—Cutie Pies made in standard muffin pans, Petit-5s
made in mini muffin pans, Pie Jars made in small jam-type jars, Flipsides
formed like a pocket, Piepops made on a stick, and Full-Sized Pies made in a
traditional 9-inch pie pan. <o:p></o:p></span></div>

hand, not my food processor, and found that I may not have mixed it thoroughly
enough as well as let it get too warm because it was very sticky when I rolled
it out. The next time I will definitely
try my food processor for the mixing and not letting the dough sit out for more
than ten minutes before I get rolling.<o:p></o:p></span></div>

<span style="font-family: Arial, Helvetica, sans-serif;">Right away I was surprised to discover that the lattice-top
was actually constructed first, and then placed on the top of the pie. I had always assumed that the lattice had to
be made on top of the pie and I had only ever made Grandma’s oil crust (which
is very soft), so I could not fathom how to create the lattice effect without
it ripping apart. Another trick I
learned was the use of the freezer for making the lattice firm enough to form
the desired shape without ripping apart, as I had originally feared. So with these breakthroughs in mind, the
lattice was constructed with ease and I would gladly try it on another
pie. Intimidation factor denounced.</span></div>

cherries I wondered if one of the reasons my husband has turned his nose up at
cherry pies was that all cherry pies he has had in the past have been made with
the sticky cherry pie filling found in most baking aisles at grocery stores
across the United States. Again the
challenge to dissuade my husband’s stance on Cherry Pie made me anxious to get
this delight in the oven, so I could serve him a new perspective. </span></div>

I’ll give you one guess as to who was in
charge of pies this year. Not a
brain-buster of an answer here. With my
pie project underway, I was more than happy to volunteer. I had originally planned to make one of the
pies a pumpkin, but when I learned that only one or two people really cared for
pumpkin pie, I quickly changed my plans to engage a few more of the family in
pie-tasting. The short order: 1 <a href="http://theclevernorthwind.blogspot.com/p/fruit-pie-recipes.html">AppleRaspberry Crumb Pie</a> and 1 <a href="http://theclevernorthwind.blogspot.com/p/frozen-pie-recipes.html">Nutter Butter Frozen Peanut Butter Pie</a>.<br />

The <a href="http://theclevernorthwind.blogspot.com/p/fruit-pie-recipes.html">Apple Raspberry Crumb Pie</a> recipe comes from the <a href="http://www.amazon.com/Betty-Crocker-Baking-Magazine-Paperback/dp/B0014TVIF2/ref=sr_1_1?ie=UTF8&qid=1354047586&sr=8-1&keywords=Fall+2007+Betty+Crocker+Fall+Baking">Fall
2007 Betty Crocker Fall Baking</a> magazine (the little magazines sold at the
checkout stand at grocery stores). This
was not a new pie for me to make, so I already knew what to expect and I tell
you, it did NOT disappoint. Last
Thanksgiving when I made this pie for my family, I used Grandma’s oil
crust. This year to mix it up a little,
I used the basic flaky piecrust recipe from Real Simple magazine.</div>

By using the basic flaky piecrust recipe, I was able to make
the crust of the pie the day before Thanksgiving, cover it with plastic wrap
and keep it refrigerated overnight, taking some pressure off my time restraints
on Thanksgiving Day. When I got up on
Thanksgiving, I sliced up the apples, tossed the apples in some sugar and
spice, and was ready to fill my prepared piecrust. <br />

How did these two very different pies turn out, you
ask? Divine! I am not a great fan of peanut butter (nor am
I a foe), but the <a href="http://theclevernorthwind.blogspot.com/p/frozen-pie-recipes.html">Nutter Butter Frozen Peanut Butter Pie</a> was a delicious peanut
butter pie. The next time I make this
pie, I will drizzle a little chocolate on the plate, as the recipe
suggested. The pie was relatively rich,
so I would also suggest a cup of coffee or a glass of milk to balance the richness.</div>

<div class="MsoNormal">
<span style="font-family: Arial, Helvetica, sans-serif;">Luther and Laurie, a local pastoral family, were the guinea
pigs for the fourth week’s pie: <a href="http://theclevernorthwind.blogspot.com/p/fruit-pie-recipes.html">Peach Pie with Candied Pecan Topping</a> from <a href="http://www.amazon.com/Cook-Book-Anniversary-Limited-Edition/dp/B000GCG998/ref=sr_1_1?ie=UTF8&qid=1352919379&sr=8-1&keywords=Better+Homes+and+Gardens+75th+Anniversary+Edition+Cookbook">Better
Homes and Gardens</a>. After the
previous pie’s lengthy crust process I decided to keep the crust simple by
using Grandma’s oil crust, a recipe that I have memorized by rote over the
years. Luther and Laurie had requested a
fruit pie, so peach seemed a fitting option, particularly with the candied
pecan topping to welcome the cool autumn evening. </span></div>

year, there will be others that get a negative review, as well. Onward, ho! </span></div>

<span style="font-family: Arial, Helvetica, sans-serif;">I was excited to make a <a href="http://theclevernorthwind.blogspot.com/p/cream-pies-recipes.html">Banana Cream Pie</a> because I was
going to try out a new pastry crust for the pie. Typically I stick to my grandma’s oil crust,
as I love its taste and texture.
However, as I was reading about some of the downfalls of cream pies being
a crust that does not hold up when refrigerated, I knew this would be a great
week to try out a new crust that had been tested by <a href="http://www.americastestkitchen.com/">America’s Test Kitchen</a>. The consensus from their thorough testing is
that a pastry crust rolled out on graham cracker crumbs would provide a more
stable crust that could withstand refrigeration, without the sogginess that
generally follows.</span></div>
<div class="MsoNormal">
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span></div>
<div class="MsoNormal">
<span style="font-family: Arial, Helvetica, sans-serif;">The crust did turn
out quite magnificent, though the process was much more involved than my
grandma’s crust, using both butter and shortening, and requiring both
refrigeration time and freezer time. The
addition of the graham cracker crumbs added a nice flavor to the crust that
complemented the filling well. As for
sogginess… there was none of that. Even
the second day! </span></div>

<div class="MsoNormal">
<span style="font-family: Arial, Helvetica, sans-serif;">Rich and delicious are the first two words that come to mind

<span style="font-family: Arial, Helvetica, sans-serif;">In my previous post I had mentioned that very little granulated
sugar was needed to make this pie—it only needed two tablespoons. I knew I did not want to pack a container of
sugar for such a scant amount, so I made good use of the sugar packets,
undoubtedly meant for the coffee brewed using the in-room coffee maker in the
condo we had rented for the week. The walnuts
for the crust I had ground before leaving for vacation and the rest of the ingredients
were easy to acquire at the local grocery store in Newport, Oregon. </span></div>

<span style="font-family: Arial, Helvetica, sans-serif;">My first attempt at forming the crust was a little
discouraging. I quickly realized as I
pressed the walnut crust into the glass pie pan, the one I used for almost all
of my pie baking, that my ingredients were not going to stretch the distance or
depth of the pan. The recipe was
designed for a smaller pan. Thankfully
my parents saved the day with a small metal pie pan they had packed, just in
case I had not packed one of my own. Thus,
after scraping the first attempt into the second metal pie pan, the crust spread
exactly the distance and depth for which it was intended. Success!</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">While my first impression of the <a href="http://theclevernorthwind.blogspot.com/p/frozen-pie-recipes.html">Chocolate Bar Pie</a> was rich and delicious,
there was some discussion among my family of whether or not the crust needed to
be walnut or if a graham cracker crust or a pastry crust would have
sufficed. Everyone enjoyed the pie, but
the consensus seemed to be that sometimes you feel like a walnut crust, and
sometimes you don’t. </span></div>

I needed a pie that did not require a lot of ingredients since the car would be loaded to the gills with all manner of other items. I knew we would have access to a kitchen, so baking would be a possibility. I did not however, know what kind of equipment I would be working with or what utensils would be at hand. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Arial, Helvetica, sans-serif;">The solution: <a href="http://theclevernorthwind.blogspot.com/p/frozen-pie-recipes.html">Chocolate Bar Pie</a> from <a href="http://www.amazon.com/Cook-Book-75th-Anniversary-Limited/dp/0696222507/ref=sr_1_2?s=books&ie=UTF8&qid=1352502709&sr=1-2&keywords=better+homes+and+gardens+new+cookbook+75th+anniversary+edition">Better Homes and Gardens</a>. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Arial, Helvetica, sans-serif;">The recipe needs no flour, no odd spices, and very little sugar. The only prep necessary before leaving for vacation was to grind some walnuts for a crust. The rest could be made in a sparse kitchen with minimal utensils and equipment... while watching whales surface from the window in front of me. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Arial, Helvetica, sans-serif;">Smells like a perfect vacation pie.</span>Breehttp://www.blogger.com/profile/09389552946528122049noreply@blogger.com0
